Chilli Jam

Ingredients

200g large red chillies
200g chopped onions
250g sugar
125ml water
1/2 tsp salt
2 tbsp lemon juice

Method

Slice chillies, leave seeds in if you like it hot, otherwise, discard

Place chillies in a pot with all other ingredients, bring to boil and boil slowly, stirring occasionally, for 30 mins or until desired consistency.

Pour into sterilised jars and seal. makes 2 medium jars.
It doesn't really matter if this finishes up with a jam like consistency or not. It is usually eaten by adding a spoonful as a sauce on top of cooked meat, or to accompany cheese, ham and a nice crusty bread roll, or as a enhancement to meat and salad sandwiches.
